Practice makes perfection! There is no doubt of that. each time I cook my waffles, they are better! They have better texture and flavor. This Oatmeal waffle is super fluffy and crunchy. Would you believe if I told that I did not used egg neither banana? Incredibly, not! I only used chia seeds and oats. This two heart healthy ingredients made the batter rise just like a cake.
The waffles have chia seeds, oats and vanilla. For me, it is very important the quality of the vanilla. I like to buy them in Dominica Republic, some Caribbean Islands or the local ones from Puerto Rico. The quality of the this essence can drastically change the flavor of your food. Back to the waffles, I cooked them in the waffler maker about 7 minutes each side. The result was a golden waffle with a crunchy texture in the outside and moist in the inside.
I topped the waffle with two dollop spoons of greek yogurt, a spiral of peanut butter and berries.
Ingredients: yield: 1 person
1/4cup whole wheat flour 1/4cup oats 1tsp chia seeds 1/2tsp baking powder 2tsp brown sugar 1/2tsp vanilla water for mixing
Optional toppings: greek yogurt, peanut butter, berries
First, turn on your waffle iron on maximum heat.
Now, mix all of the ingredients with the water until consistency. Since the chia seeds and oats absorb a lot of water you will have to add more water than usually. The batter will not be runny as the other waffle batters. It is going to be a somewhat thick.
Once done, pour all of the batter into the center of the hot waffle iron and cook during 7 minutes each side. Turn off the waffle maker and transfer your waffle in the serving dish. Finally, add the toppings you want!
