Mango Pancakes

If life give you mangoes…make everything mango! Lately, I had make mango juice, ice cream, jelly, desserts and so far: oats, crepe, waffle and pancakes. It has bring a unique flavor to all these mango recipes. They bring a natural sweet flavor and brilliant color. It also brought a smooth and juicy texture to the pancakes, waffle and crepe.

Mango is a tropical fruit that is super healthy to our body. You can use it in the inside or in the outside. Mangoes can soothe your skin if you develop a scrub or even consuming it. They avoid a heat stroke and stabilizes cholesterol levels. Mangoes contain vitamin C, A, copper, magnesium, iron, potassium and fiber. I invite you to play with mango and try these recipes at home and create your owns.

These spongy pancakes were made with a home made mango juice. I added vanilla and less sugar than my traditional pancakes. I topped them with a greek yogurt sauce, small blackberries, bananas and homemade chia mango jelly.

Ingredients:                                                                                                                                                                                                                                                                 yield: 1 person

1/4cup whole wheat flour       1tsp brwon sugar       1/2tsp vanilla       1/4tsp baking powder        a dash of cinnamon and nutmeg      mango juice for mixing

For the greek yogurt sauce: 1/4cup greek yogurt       2T almond milk

Optional toppings: mangoes, banana, berries, nut butters

Procedure:                                                                                                                                                                                         In a bowl mix all of the ingredients for the mango pancakes and mix with the mango juice until reach the consistency. Now, turn on a stove top on medium heat and spray coconut oil in a pan. Pour an amount of the batter and let cook until bubbles appear. Flip and cook another minute.

Transfer the pancakes to the serving dish.

For the greek yogurt sauce, simply mix the greek yogurt with the milk until consistency. Of course, you can add any flavor you want(coconut essence will amazingly work with these pancakes).

Finally, add the toppings of your choice!
