These spongy pancakes were made with a home made mango juice. I added vanilla and less sugar than my traditional pancakes. I topped them with a greek yogurt sauce, small blackberries, bananas and homemade chia mango jelly.
Ingredients: yield: 1 person
1/4cup whole wheat flour 1tsp brwon sugar 1/2tsp vanilla 1/4tsp baking powder a dash of cinnamon and nutmeg mango juice for mixing
For the greek yogurt sauce: 1/4cup greek yogurt 2T almond milk
Optional toppings: mangoes, banana, berries, nut butters
Procedure: In a bowl mix all of the ingredients for the mango pancakes and mix with the mango juice until reach the consistency.
Now, turn on a stove top on medium heat and spray coconut oil in a pan. Pour an amount of the batter and let cook until bubbles appear. Flip and cook another minute.
Transfer the pancakes to the serving dish.
For the greek yogurt sauce, simply mix the greek yogurt with the milk until consistency. Of course, you can add any flavor you want(coconut essence will amazingly work with these pancakes).
Finally, add the toppings of your choice!
