This Mango Oatmeal is naturally sweet and delicious. I made them with a homemade mango juice. I used two mangoes, tumeric, ginger and water. I simple blend them until obtain the juice consistency. I store it in a crystal bottle in the refrigerator. For the oatmeal, simply add the mango juice when cooking them. If you preferred it less concentrate, then distribute the liquid between water and juice according to your preferences.
I like the fact that I could feel the fiber of the mango and the traces of tumeric and ginger. I topped this energetic oatmeal with blueberries, rasberries and pistachios.
Ingredients: yield: 1 person
2/3cup oats 1 cup mango juice (or 2/3cup mango juice and 1/3water) a dash of nutmeg, vanilla and cinnamon
toppings: pistachios, blueberries, rasberries, nut butters, nuts, seeds, other fruits
Procedure: Turn on a stove top on medium heat and add the liquid.
Now, stir in the oats and the spices. Let cook for about 10 minutes. After it boils, lower the heat and cook until well done (about 3-5 more minutes). Then, turn off the stove and wait a few minutes for the oatmeal to stand.
Transfer the oatmeal to the serving dish and add the toppings!
