Avocado Pomegranate Grilled Sandwich


This sandwich from Fit Foodie Finds (http://fitfoodiefinds.com/) is amazing! You have the sweet and salty ingredients and you have the smooth and crunchy texture. I would never develop this idea for such an extraordinary sandwich. It is an excellent choice for breakfast to enjoy with your favorite tea or coffee. You may also prepare it for lunch or even diner. You can cut the sandwich in half and transform it into your mid-morning and mid-afternoon snack. All the ingredients compliments to make a balance in this healthy sandwich.


I used a bread made of oats that is cooked in Las Marías, Puerto Rico. It is low in calories and gluten free. I toasted the bread in a pan and then, put the slices of tofú cheese that I also found on Freshmart. There are a myriad of vegan cheeses. They can be made of yucca, tofú, almond or cashew. The on I used is made of tofú form Tofutti. I liked how it tasted. For one slice you hace 6g of fat, 1g of carbohydrate and 2g of proetin.


You can cut the avocado in cubes, slices or mashed it.


Working with granada is really fun. It literary explodes each time you cut it. The corner of my kitchen finished withj splashes of granada juice in the walls. I like the feeling that biting a granada aril has. You have a feast of that juice in your mouth.

For a protein source, I cooked eggwhites as an omelette. You may use tofú, scrambled or fried egg or leave it just with the cheese.


Ingredients:                                                                                                                                                                                   yield: 1 person

2 slices of bread      6T eggwhites or the eggwhites of 2 eggs       1T granada arils        1.5T avocado        2chesse slices


Turn on a pan on medium heat and warm your slices of bread. Once toasted, turn off the stove and put the slices of cheese on top. Transfer them to the serving dish. Prepare the eggwhites omellete and put it on top of a slice.


Now, put the arils, the avocado and close it with the other cheesy toast.


You are done!
