Banana Sushi


Have you ever make sushi? Every time my uncle visit Puerto Rico we make sushi. For us is very fun the whole process of making the list and the menu, buy the ingredients, cook them, prepare them, serve them and eat them. This Banana Sushi is also super fun to do and it is super delicious. The banana is roll on a crepe and stick with peanut butter. Then, I topped it with pistachios and blueberries. I finally decided to drizzle honey and sprinkle cinnamon (I love cinnamon).

Once I rolled the banana, I cut it as a sushi and garnished it with the toppings.

You may eat it with your hands, sticks or with a fork, but you will not have fun.

You can cook this sushi crepe as an appetizer for a brunch with the family or a “pick me up” desert. This dish is amazing for kids because they will find this interesting, fun and delicious so they will eat a healthy course.


Ingredients:                                                                                                                                                                                                yield: 1 person

For the crepe: 1/4cup whole wheat four             2tsp brown sugar           1/2tsp vanilla        cinnamon, nutmeg and salt to taste        vegan milk or water for mixing

Other ingredients: a banana        1T peanut butter or other nut butter

Optional toppings: nuts, seeds, fruits, honey, cinnamon


Procedure:                                                                                                                                                                                                 In a bowl mix all of the ingredients for the crepe until consistency. Then, turn on a pan on medium heat and drizzle coconut oil. Pour all the batter of the crepe in the hot pan and make small circular movements in order for the batter to expand. Leave for 2 mins, approximately and flip the crepe and cook another minute. Once done, transfer the crepe to the serving dish and spread the peanut butter. Now, put the banana in one side and start to fold it.Cautiously, cut the sushi and garnish it.
