I know it will sound weird to you, but I promise this is a super fun, delicious and healthy salad.It is the perfect twist to stop eating bored salad with only veggies, horrible dressings or the traditional salads. The Chobani Flips inspired me to make this salad. They have a greek yogurt with peach, pistachios and dark chocolate. I found this creation amazing and I decided to adopted it. I had also make oatmeal, pancakes, crepes and french toasts with these elements. It is really nutritious because you get many minerals such as potassium. You have the vitamin C from the peaches and healthy fats from the pistachios and dark chocolate. You also get loads of antioxidants. I prepared this salad with an organic spring mix and tossed with a coconut greek yogurt dressing.
And why not having this salad for breakfast? It is easy and quick to prepare and you get energized.
Ingredients: yield: 1 person
For the salad: a bunch of spring leaves 100g cubed peaches 2T pistachios 1T dark chocolate chips
For the dressing: 3T greek yogurt 1.5T coconut milk
Procedure: Mix the greek yogurt with the coconut milk until well combined and until obtained a dressing consistency. Now, clean the spring mix with water and put them in the serving dish. Add the remaining ingredients to the salad and enjoy!
