This soup is sweet, delicious and really easy to make. This will travel you to the latin area.
Ingredients: yield: 3 servings
2 yellow plantains 1onion chopped one pepper chopped (preferably yellow color) 1/2tsp rosemary leaves drizzle of olive oil water salt to taste 1tsp garlic
Procedure: Preheat the oven at 300°F. Take out the skin of the plantain and cut them in slices in a diagonal direction. Drizzle olive oil in the baking tray and put the cut yellow plantains. Bake for 30-40mins until soft and brilliant. Then, sautee the other vegetables until soft. In a blender or food processor, add the sweet plantains, vegetables, garlic and spices with water until soup consistency. Finally, serve it or store in a container and put it in the fridge.
