This orange crepe is really moist, soft and delicious. It has the citric flavor of the orange. It is made form a juice I prepared with ginger, tumeric, orange and carrot. This crepe is very healthy and will boost your immune system. It is a dish that shows that you can eat healthy and deliciously at the same time and you are also healing your body.
Ingredients: yield: 1 person
1/4cup whole wheat flour 2tsp white sugar a pinch of cinnamon, nutmeg, salt and vanilla essence juice for mixing purpose
For the filling: You can use 1/3cup of greek yogurt (simply or combined with any flavor) or make a constarch by using 2T, almond milk for mixing and 1tsp coconut essence
Optional toppings: berries, granada arils, kiwi, honey, nut butter
Procedure: In a bowl mix all of the ingredients for the crepe with the juice until reached the consistency. Then, turn on a stove top and spray a pan with coconut oil. Pour all the batter of the crepe and let it spread. Cook it until the center is firm (about 2mins), flip it and cook other minute.
Transfer the crepe to the serving dish and fill it with you yogurt or conrstarch. Close it and add the toppings.
If making the cornstarch, first dissolve it in a small sauce pan with almond milk and the coconut essence. Then, transfer to the stove and stir on medium heat. Once you see that it start to thicken, remove from the heat and pour inside the crepe. Eventually, it will get firmer because of the preserved heat.
