Mocha Crepe


This mocha crepe has cocoa and coffee in its mixture. It is filled with greek yogurt, topped with blueberries and strawberries and drizzled with melted dark chocolate. The texture is really chocolaty, moist and perfectly balanced.


Ingredients:                                                                                                                                                             yield: 1 person

1/4cup whole wheat flour      2tsp brown sugar      1T cocoa powder    1/2tsp coffee flour      black coffee for mixing purpose       a pinch of salt


Filling: 1/3cup greek yogurt or cottege cheese

Toppings: berries and dark chocolate


Procedure:                                                                                                                                                                In a bowl mix all of the ingredients for the crepe mixed with the black coffe until crepe consistency. Turn on a stoove top on medium heat and drizzle coconut oil in spray. Then, pour all the batter in the skillet and move it slightly in circular movements. Let it cook until firm (about 3-5mins), flip and cook one more minute. Once cooked, transfer the crepe to the serving dish and ad the greek yogurt or cottage cheese. Close the crepe by folding the sides of the crepe and then the bottom into the center. Finally add the berries and dark chocolate.
