Pumpkin Ice Cream


Pumkin is a vegetable rich in micro nutients and antioxidants. This vegetable is easy and fast to grow. It can come in orange or green outside color, but it is always arange in the inside. They also grow in different shapes and sizes. It is high in carotenoids and vitamins that act as antiinflamatories. It is a very low calories food. It has vitamin A, C and E. Zea-xanthin is an antioxidant in the pumpkin that protects the eyes. It has ultra-violet rays filtering actions in the retina of the eyes that offers protection for age-related macular disease. This food also possesses all the vitamin B groups and has phosphorous, calcium, potassium, and copper. Pumpkin act as a blood pressure reducer. Besides its flesh, the seeds of pumpkins have many benefits for the human body in the inside and outside. You can also use pumpkin puree for the skin in the body. You may use it as a soap, or scrub. So if you have not tried pumpkin yet, you better give this super-food an opportunity in your life and you will see great results.


Pumpkin has a myriad purposes in the kitchen, You can boil them, sautee them, puree them, the actions are countless. You can use it either in sweet or salt dishes.  This pumpkin ice creams is super healthy and fun to do and to eat. You can add a lot of toppings in order to boost the nutrients in the dish. I usually use: coconut shreds, seeds, walnuts or pecans, raisins or cranberries and other fruits such as banana, berries, apples, pears or kiwis. Use your imagination and you will create an exceptional Pumpkin Ice Cream.


Ingredients:                                                                                                                                                                                                                                                             yield: 1 person

2 frozen chopped bananas (5-6oz)          2/3cup pumpkin puree         a pinch of cinnamon and nutmeg          ginger to taste         1clove and 1 allspice                 water for blending

Optional toppings: bananas, berries, seeds, nuts, dried fruits, coconut shreds, dark chocolate


Procedure:                                                                                                                                                                                                                                                               In a blender ad all the ingredients for the ice cream. Add water and ice until the consitency is reached. Transfer the ice cream in a tall glass or deep dish. Add the preferred toppings.
