This oatmeal is super nutritious and delicious. It is ideal for cold days. This oatmeal contains tumeric, ginger, cinnamon, nutmeg and vanilla. Besides it has orange and carrot which is why the oatmeal is orange color. I blend chopped orange and carrot with the spices and then added it to the oatmeal in the casserole. Working with colors is really fun. It is like magic in the kitchen. Colors make food more interasting and the can tell so much about a dish.
I topped this super oatmeal with sautted bananas, blackberries, chopped macadamias and two pieces or orange and it’s peel. Sautte bananas is a new element I am including ultimately in some of my dishes. It brings out the sweetness and aroma of the holy banana. I spray a pan with coconul oil, add a pinch of vanilla essence (or coconut essence or both), a dash of cinnamon and let the banana slices to cook for one side about 3mins until golden, flip them and cook for 3more minutes until golden.
Ingredients: yield: 1 person
1cup oats 1medium carrot chopped in small slices 1 orange apinch of nutmeg, cinnamon, vanilla, tumeric and ginger
Toppings: 1/2 banana (2oz) in slices black berries pieces of orange 1T chopped macadamias orange peel for garnish
In a blender, liquify the orange and carrot with the spices and water.
Then, add the liquid to the oatmeal in a casserole on medium heat. Add more water if necessary.
Cook the oatmeal until it boils. Then, lower the heat and cook until completely done. Transfer the oatmeal to the serving deep dish.
One medium heat, cook the banana slices for 3mins on each side until golden.
Once done, add the banana slices to the served oatmeal. Then, add the pieces of orange in the center and around the black berries. Put the orange peels on top of the orange pieces and put the macadamias around.
