These french toasts are super juicy, sweet and smoky. The natural fat of the coconut shreds will give the correct moisture and softness. Besides, it will provide a sweet taste so you wont need to use syrup. When the coconut get toasted, it get a smoky and wonderful aroma and taste. It was easy to stick the coconut shred to the bread slices. It is a similar process to coat. The mixture contain eggs, vanilla, sugar, spices and almond milk. It is a really fun process that you can make with your guests.
I used a local bread from Las Marías, Puerto Rico. This bread is made form oat flour and only contains vegetable oil, salt and nutritional yeast. It is a thin bread so it will absorb the mixture quickly. You can found this bread in Freshmart
I topped them with organic berries and drizzle a bit of berry juice for more flavors.
Ingredients: yield: 1 person
2 bread slices 1tsp brown sugar 6T eggwhites or 2 eggwhites 4T coconut shreds 1/4tsp vanilla a pinch of nutmeg, cinnamon and sea salt 3T almond milk berries for toppings
Procedure: Take out three dishes. In one, put the bread slices. On the other put the coconut shreds and in the last one is for the egg mixture. For the mixture, beat the eggwhites, vanilla, sugar, spices and 3T of almond milk. Turn on a stove top and drizzle coconut oil in the pan. Leave the bread in the mixture for they to absorb it. Then, transfer the bread slices into the coconut shreds and coat them on both sides. Put them in the pan and cook them about 1.5-2.5mins each side.
Transfer them to the serving dish.
Add the berries, a drizzle of juice and enjoy!
