Peppermint Mocha Crepe


This crepe looks really elegant, colorful, interasting and delicious. The crepe tasted similar to the Peppermint Mocha Latte form Starbucks. It has the three main ingredients that balanced perfectly in each bite you take: peppermint, cocoa and black coffee. Many coffee places make these flavored frapuccinos or lattes during Christmas season but you can either make this crepe for Christmas season or any time of the year.The peppermint is the flavor that will bring freshness to the mocha flavor. If you like mochas, probably you will like this too. I used kiwi, strawberry, dark chocolare chips and pieces or organic candy canes for toppings. Besides, I drizzle drops of black coffee and honey. Finally, I garnished the fabulous crepe with three fresh mint leaves form my garden.


Ingredients:                                                                                                                                                                      yield: 1 person

1/4cup whole wheat flour      1/2tsp peppermint extract        a pinch of salt       1T cocoa powder       black coffee for mixing        2tsp brown sugar


Filling: 1/3cup greek yogurt


Additional: 1T dark chocolate chips       fruit of choice (I used half a kiwi and one strawberry)      7oz chopped candy cane


Procedure:                                                                                                                                                                                                                                               Mix all the ingredients for the crepe and mix with the coffee until crepe consistency. Turn on a pan and spray coconut oil. Then, pour all the batter and spread it trough the pan making small circles. Let it cook until it has turned darkerand the edges and center are firm. Transfer the crepe to the serving dish and filled it with the greek yogurt. Close the crepe and add the toppings.
