These pancakes are very fluffy and have a great texture. It is important to add coconut oil beacuse it adds moisture ti the pancakes since the cornmeal tends to give a dry texture. Their flavor is amazing and sweet. Cornmeal is a kind of flour made form ground sweet corn. You can found it in white, blue, white or red varieties colors. This flour is gluten free and is mostly used in baking. This ingredient can be a sweet or salt course.

1/4cup whole wheat flour 33g cornmeal 1/2tsp coconut oil 1/4tsp baking powder a pinch of salt nutmeg, anis seeds and cinnamon to taste ginger water 1/4tsp coconut essence 1/4tsp vanilla essence
In a bowl mix all the dry ingredients for the pancakes. Then, add the wet ingredients and dilute them with ginger water until pancakes consistency. Now, turn on a pan on medium heat and spray coconut oil. Pour the desire amount of batter and cook for until fluffy and firm. Flip the pancakes and cook 30secs. Trnasfer them to the serving dish and add the greek yogurt. Add the toasted coconut, soaked pistachios and blueberries. Finally, drizzle honey on top of the fluffy pancakes.
