Mint Pancakes


These mint pancakes are very nutritious because you consume a vegetable ratio without noticing. I love to make colorful dishes because it gives a very attractive characteristic to them.


Ingredients:                                                                                                                                                   yield: 1 person

1/4cup whole wheat flour      spinach juice     1/4tsp baking powder     1/2tsp mint essence    1/4tsp coconutessence     2tsp brown sugar     a pinch of salt


Additional: 1/3cup greek yogurt       2tsp honey      cinnamon to taste      fruits     1T almonds



In a bowl mix all the dry ingredients. Then, add the essences and mix the batter with the spinach juice (for the spinach juice simply blend spinch with water. You may add a sweetner). Turn on a pan on medium heat and spray coconut oil. Pour an amount of the batter and cook until buble appear.


Flip and cook for 30secs more. Once cooked, transfer them to the serving dish.


In the serving dish, add the greek yogurt, almonds and fruits. Finally drizzle the honey and cinnamon.
