Banana and Dark Chocolate Chip Pancakes

WP_20150303_014                                                                                                                    I love Vegan Banana Pancakes because they are the fluffiest because banana works as an egg besides a sweetner. These pancakes conatains the Three Super S: soft, spongy and sweet. I served mine with toasted peanuts, banana, strawberries, dark chocolate chips and greek yogurt mixed with toasted coconuts.  I used dark chocolate chips and a coffee syrup.

You can see how the banana incorporated in the pancake and it is really delicious.

Ingredients:                                                                                                                                                                       yield: 1 person

1/4cup whole wheat flour     1.5oz banana     1tsp brown sugar        1/2tsp vanilla     1/4tsp baking soda     a pinch of salt, cinnamon and nutmeg                         1T dark chocolate chips           ginger water

Toppings: 1tsp dark chocolate chips       1.5banana in slices     2strawberries in slices    1T peanuts

For the greek yogurt: 1/3cup greek yogurt     1tsp toasted coconut shreds

Procedure:                                                                                                                                                                         In a bowl, mash the banana with the vanilla and ginger water until soft. Now add the rest of the ingredients and mix well until you get the pancake consistency and add the dark chocolate chips. Turn on a pan and spray coconut oil. Pour the batter and cook until fluffy and darker. Flip and cook other 30secs.

Repeat the process until the batter is finished and transfer them to the serving dish.

For the greek yogurt: toast the coconut shreds in a pan until golden and aromatic. Mix in a bowl with the greek yogurt and serve on the pancake dish.

For the coffee syrup: Mix the honey with the coffee and stir until well combined.
