These pancakes are really delicious and extremely healthy. You get the fat form the amzing and unique pistachios besides the antioxidats from the dark chocolate and the vitamins from the peach. You also have the minerals like calcium from the greek yogurt. The sweetness of the peach, the mild flavor of the dark chocolate chips and naturally salt flavor of the pistachios make this pancakes lovely.
Ingredients: yield: 1 person
1/4cup whole wheat flour 1/4tsp baking soda a pinch of salt 1/4tsp anis seeds, cinnamon and nutmeg 2tsp brown sugar water 1/2tsp vanilla
Toppings: 1/2cup greek yogurt 1T chopped pistachios 1T dark chocolate chips 1T coconut shreds 100g peach (cooked with 1/2tsp honey and cinnamon and anis to taste)
Procedure: In a bowl, mix all the dry ingredients and then add the liquid ingredients and mix with water until pancake consistency. Turn on the stove on medium heat and add coconut spray to the pan. Pour the desire amount of batter and cook until bubble appear (about 1.5min). Then, flip it and cook other 30secs. Transfer the cooked pancakes into the serving dish. Add the greek yogurt on top of the pancakes.
Once done with the pancakes, Cut the peach in squares and cook them in the pan with the honey and spices until tender.
Serve them on top of the pancakes with the greek yogurt. Now, toast the coconut shred with the pistachios until golden and aromatic and put them in top of the pancakes and add the dark chocolate chips
