Rasberries, Figs, Coconut, Pecans and Spinach Salad


I created this AMAZING salad. After this, all you will want to lunch is this sweet, fun, healthy and delicious salad. It contains rasberries, coconut shreds, figs, pumpkin, pecans and wilted spinachs. The essence of this recipe is how each ingredient compliment in order to activate all the phytochemicals, nutrients and properties that will bedelivered in our body.


The myriad of colors: green, red, yellow and brown make this salad ver attractive. It turns kind of sweet because the rasberries and figs loose their juice. The pumpkin pieces balance the sweetness of the salad and the spinach boolster the nutrition. The pecans give a touch of crunchiness and nutty flavor.


This salad contain healthy and clean fats, carbohyfrates and protein. The potential of each ingredient provides antioxidants, minerals and vitamins that your body will thnak you.


I served the salad with tilapia cooked with curry. You may do the same or savour it with other source of meat, tofu or just without meat.


Ingredients:                                                                                                                                                                     yield: 1 person

1cup spinach        2figs (40g)      pumpkin and rasberries at ease      1tsp coconut shreds     2T chopped pecans


Procedure:                                                                                                                                                                       Turn on a pan and add the spinach. Cook until wilted and transfer them into the serving dish. The rest is to cut the figs, rasberries and add the coconut shreds and chopped pecans and pumpkin to the dish and mix.

You may cook your source of protein as your wish. Some ideas are curried tofu or fish.
