Who wants a peanut butter and banana crepe!? This is incredibly delicious. These two ingredients always pair perfectly in everything. They always get me in love and I will never get tired of them. They are excelent at any time of the day because they complement each other in order supply energy. The mixture of the crepe has peanut butter and banana and has a doughy texture. The filling is greek yogurt with dark chocolate chips which is amazing because between the sweet flavor of the bananas you can get a bitter taste form the dark chocolate. I topped the crepe withe banana, blueberries and a cocoa salsa.
Ingredients: yield: 1 person
For the crepe: 1/4cup whole wheat flour 1tsp sugar 1T peanut butter 1oz mashed banana a pinch of salt, nutmeg and cinnamon 1/4tsp vanilla water or ginger water
For the filling: 1/2cup greek yogurt 1T dark chocolate chips
For the sauce: 1/4tsp cocoa powder 1/2tsp almond milk
Procedure: In a deep bowl combine the mashed banana, sugar, vanilla and peanut butter until soft. Then, mix in the remaining ingredients and dilute with water or coconut water until having a crepe consistency. Turn on a pan at medium heat and spray coconut oil. Pour all the batter and move back and forth and in circualr way for the batter to spread and be thin. Let it cook until it turns golden and the sides rise a little and seems crunchy. Flip it and cook between 30secs to one minute. Transfer the crepe to the serving dish. Add the greek yogurt with the dark chocolate chips and close the crepe by folding the corners. Finally add the topppings and salsa
