Coffee Pancakes Madness!!!


This pancakes are a bomb! Inside of each bite is a celebration of the best flavors: dark chocolate, coffe, and peanut butter! The pancake are moist and soft and the greek yogurt is very creamy. It is made of unsweetened cocoa powder, brwon sugar and Peanut Butter Co Dark Chocolate Dreams Peanut Butter. This is my favorite peanut butter ever! It combines with many ingredients and you can use it for any recipe. This magic jar contains 13g of fat, 12g of crabohydrates and 6g of protein in each 2tbsp you take. The jar is not expensive. The only place I had seen it in Puerto Rico was at a local pharmacy in the Old San Juan at $6.00. But if you live in the United States, I guess it will be easier to find.


Ingredients:                                                                                                                                                                                                                   yield: 1 person

For the pancakes: 1/4cup whole wheat flour     1 egg        1/4tsp baking soda                     2tbsp greek yogurt     a pinch of cinnamon, nutmeg, vainilla and salt     2.5tbsp black coffee 1/4tsp coffee flour

For the greek yogurt: 1/2cup greek yogurt      1/2tsp cocoa powder     1tsp brown sugar      1/2tsp Peanut Butterand Co Dark Chocolate Dreams.

For the syrup: 1/2tsp peanut butter     1tsp almond milk     1tsp agave

Additional: one Dove dark chocolate square cut in small pieces


Procedure:                                                                                                                                               For the pancakes: Mix all the dry ingredients. Then add the egg with the other ingrefients and mix weel until desire consistency. In a hot skillet with coconut oil pour the desire amount of batter for big, medium or small pancakes. Once they turned darker and bubbled appeared, flir them and cook for 35secs, approximately. Put the cooked pancakes on the serving plate and repeat the process with the remaining batter.

For the greek yogurt: Mix all the ingredients until well dissolved.

For the peanut syrup: Mix well all the ingredients. you may use a fork.

Assembly: Put the greek yogurt mixture above the tower of the coffee pancakes and add the chopped dark chocolate square and finally add the peanut syrup.

I decided to turn more into the vegan life and I developed a very simple and succesful recipe of pancakes. One of the pancakes I enjoy the most are the coffee flavored ones. They are easily sweetened and have a peculiar texture. I will post pictures of two different ways to eat and garnish them. The first one, has greek yogurt and is topped with banana and dark chocolate chips.


The other, is topped with peanut butter and a cocoa syrup. I also added granada arils and blackberries so you may add any fruit you like.


Ingredients:                                                                                                                                                                                                                        yield: 1 person

1/4cup whole wheat flour      1/4tsp baking powder, cinnamon, salt, nutmeg and vanilla      2tsp brown sugar       1/2tsp coffee flour                  black coffee for mixing

Toppings #1:  2oz banana     1T dark chocolate chips      1/2cup greek yogurt mixed with 1/4tsp peanut butter or vanilla      1tsp honey


Toppings #2: 1T peanut butter      blackberries     granada arils     cocoa syrup (mix 1/4tsp cocoa with 1/2tsp honey and a bit of water for dissolving) WP_20150219_003

Procedure:                                                                                                                                                                                                                          First, mix all the dry ingredients. Then, add the liquid ingredients and add the black coffee until having a pancakes consistency. Turn on a pan and spray coconut oil. Pour the batter and cook until fluffy and firm. Flip them and cook another 30secs.


Once cooked, tranfer them to the serving dish and add the delicious, fun and healthy toppings.
