Ginger and Molasses Crepe

Ginger is an antique spice and is used in Ayurvedic medicine. Ginger is used to revitalize, for a better digestion and prevent infections. When I buy a piece of ginger root, I use it in slices and when I only have a small piece remaining, I let it soak in water so there I have ginger water which I use for drinks and many other recipes. Along with molasses, this combo is super healthy for our body. In addition, molasses leave a sweet natural flavor and sticky texture to the crepe or pancake.

Ingredients:                                                                                                                                                                                                                                             yield: 1 person

1/2cup whole wheat flour       1/2tsp vanilla       1/2tsp molasses     ginger water      a pinch of salt            1/2tsp brown sugar

For the filling:  1/2cup greek yogurt

Toppings: 1T almonds        50g chopped apple    1/4tsp molasses

Procedure:

In a bowl, combine the ingredients for the crepe. Add the ginger water cautiously until the consistency is reached.

Turn on a skillet and add coconut oil spray. Pour all the batter and let cook during 2-3 mins until the crepe looks firm so you can flip it and cook it one more minute. Once cooked, transfer it to the serving dish. Add the greek yogurt in the crepe and fold it by the corners.

Put the chopped apples and almonds and drizzle some blackstrap molasses.
