I felt in love with these meatballs and I know you will too! It does not matter if you are vegetarian or not, you will enjoy this healthy, fun, and different dish. You would not believe they are made from tofu. Their texture is firm and their shape is very round up. When you bite them, it is very delightful. They have a familiar taste to ricotta cheese. I cooked them with mushrooms and spinachs, but you can add any vegetable. I ate them with pasta and a homemade tomato sauce. You can eat them with rice, with a salad, a sandwich or make a wrap like you will do with falafels.
Ingredients: yield: 4 people
1 package tofu extra firm 1cup spinachs 1/3cup mushrooms 1 egg 1.5tbsp cornmeal sea salt 1tsp garlic a pinch of paprika
Procedure: First, drain the tofu water by covering it with a napkin and putting a plate over the tofu. Let it about 3hours. You may have to change the napkin to a dry one. Once drained, cut the tofu in small pieces and add the spices. In a hot skillet add the spinachs and mushrooms and cook until wilted. In a blender, put the tofu with the spices and the wilted vegetables. Blend until everything is uniform and it looks like ground beef. Transfer the mixture to a bowl and mix with the cornmeal. In a small dish, crack and whisk the egg. Preheat the oven to 225ºC. Prepare an oven container sprayed with coconut oil. Take about 2tbsp of the mixture and form a sphere. Slightly, give it an egg wash with your fingers and put it on the container. Repeat the process until the mixture is over. Let them cook in the oven abour 30mins until they are firm. Remove and serve.
