Pumpkin Crepes with Blueberry Sauce

This crepe is really delicious! You will enjoy each bite and will be very satisfied.

Ingredients:                                                                                                                                          yields: 1 person

For the crepe: 1/4cup whole wheat flour      2egg whites     2tsp brown sugar      water     3tbsp pumpkin pure

For the filling: vainilla     1/2cup greek yogurt

For the sauce: 1/4cup frozen blueberries

Procedure:                                                                                                                                             In a bowl mix all the ingredients for the crepe. Add water until the consistency is watery. In a hot skillet, spray coconut oil and pour all the mixture. Wait more less 2mins to flip or when the crepe had turn darker. Once flipped, let cook 45secs.

Fill the crepe with the greek yogurt mixed with the vainilla. Take the corners of the crepe and fold them in.

For the sauce: Microwave the frozen blueberries during 15secs. Mash them with a fork and pour the sauce over the crepe.

I added chopped walnuts for crunchyness and have a nutty flavor.
