Apple Pancakes


The spices combined in these apple pancakes make them taste like chai. Inside, they have apples and almonds that spread out their flavors when heated in the skillet. If you let the pancake mixture sit at night, it will have an intense flavor. In each bite, you will get a piece of apple and almond.


Almonds get toasted when cooking the panckes, which adds a smoky flavor.


Ingredients:                                                                                                                                               yield: 1 person

1/4cup whole wheat flour     1 egg     a pinch of cinnamon, nutmeg and salt      2tbs almonds 2tbsp greek yogurt   1/4tsp baking powder    100grams apple (50g puree and 50g chopped) 1/2cup greek yogurt


Procedure:                                                                                                                                                 Mix all the dry ingredients. When doing the apple puree you may add ginger. Then add the rest of the ingredients and mix well. Add the chopped apples to the mixture (you do not have to add them all). Turn on a skillet and add coconut oil spray. Pour the mixture and flip the pancakes once their color has turned darker and bubbles appeared.WP_20141213_001WP_20141213_002WP_20141213_003

I like my pancakes a little bit burnt. When serving them, add the greek yogurt between each pancake.
