Cocoa Crepe filled with Peanut Butter Mousse


Wooooooo! Peanut Butter and Cocoa Crepes with a Banana syrup are the bomb! The cocoa is there, the peanut butter is also there and the banana just hit it! These flavors combined together to make a feast in your mouth. Chocolate an peanut butter is a classic combination and peanut butter and banana is another combination. What I did was to infuse this ingredients into a unique french crepe. This crepe is smooth, warm, chocolaty and moist. I hope you have fun and enjoy making this icadelicious recipe!WP_20141212_004

Ingredients:                                                                                                                                               yield: 1 person

For the crepe: 1/4cup whole wheat flour      2 egg whites     1.5 cocoa      1tbsp brown sugar    a pinch of cinnamon, nutmeg, salt, and vanilla

For the mousse: 1tbsp peanut butter       2/3cup greek yogurt

For the syrup: 1tbsp mashed banana      1tbsp almond milk


Proccedure:                                                                                                                                               In a recipient, combine the dry ingredients for the crepe and mix together. Now, add the rest of the ingredients and whisk gently until consistency (you may add water). Turn on a skillet and pour some coconut cooking spray. Pour the whole batter in the pan and once you see that the crepe has turned golden, it is the time to flip it. Once flippped, wait 45secs and put it on the serving plate.


While the crepe is cooking, mix the greek yogurt and the peanut butter.

For the banana syrup: Simply mix the ingredients until homogenoeus.

For the assembly: With the crepe open, add the whole greek yogurt mousse and fold the crepe to the inside. Add some fruits of your choice and pour the banana syrup.
