Boricuas love Coquito! During Christmas season there is a Coquito in every Puerto Rican house. I do a Vegan Coquito version and sell it at $8.00 in a glass bottle. A coquito usually can stay about a month in your fridge. This banana ice cream is perfectly combined with coquito and garnished with cinnamon. The toppings are optional. Be creative! you can use seasonal fruits or nuts. I always eat my banana ice creams with greek yogurt (usually 1/2cup) so this nutritional value is included in the nutritional facts at the end.
Ingredients: yield: 1 person
1 banana (3-4oz) 2tbsp coquito 4ice cubes 1/2cup greek yogurt optional toppings
Procedure: In the Nutribullet put all the ingredients together and blend until smooth. If you need more liquid in order for it to blend homogeneously, then add more coquito or water. In a deep bowl add the greek yogurt and then the Coquito Banana Ice Cream and topped it with your favorite products.
