Coquito Oatmeal

Finally the coquito season arrived! Christmas is my favorite season because it is full of flavors, smells and tastes that always bring new recipes. Coquito is similar to eggnog. A Puertorrican coquito is made with condensed milk, coconut milk, coconut cream and eagle milk with spices such as cinnamon, anise and cloves. Some people add yolks or complete eggs in order to add thickness. All these ingredients are mixed and whisked together and then stored in a glass bottle in the fridge. This beverage is served cold.

Ingredients:                                                                                                                                               yield: 1 person

1/2cup oats      2tbsp coquito     50g apple     1tbsp chopped pecans      1tbsp toasted coconut 1/2cup greek yogurt         a pinch of cinnamon       2black figsAvena de coquito (3)

Procedure:                                                                                                                                                 Mix the oats with the coquito, cinnamon and water until it coversthe oats. Cook it in the microwave during 2.5mins. Take out and check it is cook as your wish. Then, mix the oats with the greek yogurt and add the toppings. I cut half of an apple (50g) in cubes, added two black figs, chopped pecansand coconut shreds that I toasted in the skillet until golden and smelly. Be creative with your toppings, make it fun, healthy and savory!
