Cinnamon Roll Crepes

These crepes are amzing! They are in top three favorite crepes! It is so Christmas like with hints of cinnamon and toasted pecans with a greek yogurt frosting. These crepe are filled with a cinnamon agave syrup. The mix of the crepes is my own recipe. The texture is really soft and flexible. This food is ideal for a christmas brunch or a healthy dessert or sweet entree for everyown to pick.

Ingredients:                                                                                                                                               yield: 1 person

For the crepes: 1/4cup whole wheat flour         2 eggwhites                     2tsp brown sugar        a pinch of salt, nutmeg, cinnamon and vanilla

For the filling: 1tbsp agave      1tsp cinnamon

For the frosting: 1/4cup greek yogurt     1tbsp chopped pecans Crepas CinnamonRoll (3)

Procedure:

For the crepe: Mix all the dry ingredients and then add the eggs and vanilla. Add water until the mixture is more liquid than a pancake mixture. In a hot skillet with coconut oil pour all the batter. Oncet he crepe is darker and looks firm, flip it and cook 30secs. Now, put it on a plate.

For the filling: Mix the agave and the cinnamon until soft.

Assembly: With a brush, spread the cinnamon syrup into the whole crepe. Roll the crepe and cut it as you will do with sushi. Stand up the pieces and pour the greek yogurt over the crepes. Finally, garnish them with the pecans.
