Some Pumpkin Recipes for Autumn Season

I love pumpkin, but my sister loves it more! Because of her, I started including pumpkin in many foods such as bread, french toasts, pancakes, oats, and there are still  many recipes to cook. I made my first pumpkin soup about two years ago for her and family’s dinner. My favorite pumpkin recipe is the french toasts!

Tostadas francesas de calabaza (3)                                                                                They are incredibly soft, hot, perfectly sweet, and you can topped them with whatever you like the most. I usually make a sandwich with greek yogurt and then top them with jelly, any nut butter and berries.

I have also a french toast recipe with pumpkin bread with a side of pumpkin froyo.

On the other side, for the pancakes I have three recipes. One with protein powder, other flour free, and the last one with my regular pancake mix. All  the three are amazing and that is why I have not erase them. They all have different toppings and combinations so you will spend a funny time creating yours!

My first pumkin oatmeal! It has a lot of species such as ginger, rosemary, thyme, nutmeg and cinnamon.

The picture above is a Pumpkin Spice Latte Oatmeal! My favorite one because I love coffee and pumpkin so what else can be better! I used coffee, almond milk, homemade pumpkin puree, homemade sunflower butter, greek yogurt, cinnamon, nutmeg and figs.

Finally, here is my pumpkin bread which is egg free. I used chia seed as an egg substitute and bananas for less sugar. I added some dark chocolate chips and topped it with pepitas. I always use whole wheat flour (Bob’s Red Mills). The result is a really moist, delicious and easy to do pumpkin bread. I am also selling this bread if you want a loaf.
